ANDREW WATERS is a certified Olive Oil Sommelier and passionate advocate for excellence in extra virgin olive oil. After a career as a lawyer, he moved from the courtroom to the kitchen, driven by a desire to connect people with authentic, high-quality olive oils and the stories behind them.
He lives in the Valle D’itria in Puglia, surrounded by thousands of olive trees. With a deep understanding of olive cultivation, regional flavour profiles, and the extraordinary health benefits of extra virgin olive oil, Andrew bridges the gap between farmers, mill owners, chefs and consumers.
Together with his colleagues at Atelier Olea, Andrew leads tastings and masterclasses that help people understand what makes great olive oil truly exceptional.

Edwina grew up fortunate enough to know and appreciate extraordinary olive oil from an early age. Her parents were small-scale olive farmers in Italy, and her childhood was shaped by their groves. Those early memories taught her to recognise quality, honour seasonality, and understand the quiet magic of truly great extra-virgin olive oil.Her professional background is in law, but as she stepped away from that world to care for her family, she found herself returning to the creative pursuits that had always felt most natural to her. She trained as an olive oil sommelier and felt deeply moved by what she learned — the beauty of oil, its power, and its potential to transform food and elevate even the simplest moment.
She is passionate about shining a light on the small producers who devote their lives to this craft. Their work, she believes, deserves to be celebrated, shared, and savoured.

LIZZIE WARD-BOOTH is a Garden Designer and certified Olive Oil Sommelier with a background in food. She lives in Tuscany and has been connected to the land and cultivating olives for 30 years. During these years, she has developed her expertise, respecting the environment and focusing on sustainability whilst using the latest technology to produce the highest possible quality of Extra Virgin Olive Oil. She is dedicated to sharing her deep appreciation for olive oil culture and high quality olive oil; the important role it plays in our health and the exquisite sensory experience it brings to our table.

She trained as an olive oil sommelier in New York in 2025 and has spent a season in the groves near Florence. She has a love of nature, flavour, and creating experiences that celebrate great food.
